The third chapter exploring the development of whisky distilled after the distillery’s resurrection in 1997 has been released, and is available at the distillery.
Like Chapters 1 and 2, this is a vatting of sherry and bourbon casks, and has gotten a few more years in casks since the first chapter. It’s 50.8% ABV, down from 51.9% for Chapter 1 and 51.4% for Chapter 2. Would anybody want to guess the ABV for Chapter 4? 😉
